If You Don’t Eat the Crust, Is Pumpkin Pie a Vegetable?When I was younger, cooking was fun for me. At some point between my 50th and 75th birthdays, it became a chore. Just figuring out what to eat is a drag when it seems as if everything makes you fatter or gives you indigestion or both. So I don’t cook much these days; I heat food. Today I overheated a frozen pumpkin pie. It seems as if every pie I bake either has a soggy crust or an overcooked crumbly one. This one had the latter fault. I prefer the filling anyway, so I decided to call a cucumber and a piece of crustless pumpkin pie my vegetables. I did manage to heat a few fish sticks properly, so they were delicious. In my defense, we are attempting to empty our chest freezer so we can defrost it. Al heated some of his “Okie” beans that he cooked sometime ago and froze. They smell wonderful, but my picky stomach doesn’t do beans. We have been promised about five days of rain beginning tomorrow. I decided to enjoy this wonderful day as much as possible. It may be the last one until next Spring or Summer that is so perfect. I sat outside in our little rose arbor and read the paper for a while. While working at the computer, I looked out the window a lot. With windows opened, I rearranged my office area and Al hung some pictures for me that I wanted moved around. Earlier in the day, I wrote up the travel log about our day in Belfast. It will probably join the other pages on my website tonight. Scotland is next. Then I may do a recap of the days on the Atlantic, cruising from Scotland to New York City.
